Finger limes (citrus australasica) have been native to rainforest areas of New South Wales for centuries, although have only recently been fully appreciated as a culinary delicacy in the restaurant trade.  Their unique caviar-like pulp and attractive colour range make them an interesting garnish for salad or seafood dishes.

Demand for finger limes has grown steadily in recent years with the rising popularity of native ‘bush food’, with Steven Snow from Fins restaurant in Kingscliff naming them as one of the heroes on his menu.

Judy Viola began commercially propagating fingers limes about 20 years ago, and remains a mentor for growers across the state today.  Judy now operates a citrus nursery out of Bangalow in NSW, from which she supplies grafted trees to commercial growers.  A walking finger lime encyclopaedia and well respected celebrity in the citrus growing world, Judy as published papers with the Department of Primary Industries and has been part of extensive research on over seventy-five varieties of the native fruit.
